This role operates in a cold production kitchen, where the focus is on preparing high-quality, innovative cold dishes for a variety of events and services. The Sous Chef will support and deputise for the Head Chef, ensuring the delivery of exceptional food quality, consistency, and creativity in line with RA Group standards.Key ResponsibilitiesGeneral:Assist the Head Chef in managing a cold production kitchen, maintaining high standards of food quality and presentation.Create a positive, collaborative kitchen environment where the team is motivated and engaged.Continuously explore food trends to enhance the cold food offering with seasonal, fresh, and innovative options.Food Preparation:Produce consistently high-quality cold dishes, including salads, canapés, sandwiches, and other chilled offerings.Ensure all food is prepared and presented to RA Group specifications with a focus on sustainability and freshness.Champion plant-based and sustainable cold food options, reducing waste and plastics wherever possible.Team Management:Assist in recruiting, training, and developing the kitchen team to build a skilled and cohesive brigade.Provide hands-on training for the team in cold food preparation techniques and presentation standards.Deputise for the Head Chef, managing the kitchen team and ensuring smooth operations in their absence.Financial Management:Manage stock levels and monitor food costs to align with business GP targets.Ensure proper portion control and minimise wastage to maximise profitability.Record and analyse food wastage, working with the Head Chef to identify cost-saving opportunities.Health, Safety, and Compliance:Ensure compliance with all food safety and hygiene standards, including allergen management and HACCP procedures.Maintain a safe working environment, ensuring equipment is properly maintained and used safely.Act as a role model in promoting a culture of health and food safety awareness within the team.Ideal Candidate ProfileProven experience as a Sous Chef, ideally within a high-volume production kitchen or cold food environment.Strong knowledge of cold food preparation, presentation, and menu development.Passionate about sustainability, seasonality, and creating innovative, fresh dishes.Excellent leadership and team management skills, with a commitment to developing talent.Strong organisational skills and attention to detail.Flexible, calm under pressure, and able to prioritise tasks effectively.BenefitsCompetitive salary of £38,000 per annum.Monday to Friday schedule, offering work-life balance.Opportunities for training, development, and career progression within RA Group.Work in a vibrant Canary Wharf location.Join us to be part of a passionate team that delivers exceptional cold food offerings in a fast-paced, creative environment.
